Entities involved in the processing of bacon will now have an opportunity to contribute to the upgrade of the standard for the commodity, as the Barbados National Standards Institution (BNSI) has opened Draft BNS 90 – Bacon for public comment.

The document, a revision of BNS 90:1979, has been undertaken in an effort to remain up-to-date with changing processes and to ensure public health. The standard addresses a range of issues, including: bacon classification (grade, kind and type, ‘, ‘, ‘, ‘, ‘, ‘, ‘, ‘, ‘, ‘, ‘, ‘, ‘, ‘, ‘, ‘, ‘, ‘, ‘, ‘, ‘, ‘, NULL, NULL, 0); hygiene; curing (dry-sugar, dry-salt, wet-salt, wet-sugar) and smoking; microbiological limits; packing and marking.
